FETTUCCINE ALFREDO with Courgette Pasta and Cauliflower Sauce (Gluten, Grain, Yeast & Sugar Free)

This is a fab recipe from www.thisrawsomeveganlife.com unlike most courgette noodle dishes the cauliflower makes this one so creamy. Adding in nutritional yeast really makes the flavour. It's a vegetarian source of Vitamin B-12 which is a crucial nutrient for the body involved in the production of red blood cells and for producing and maintaining myelin, the protective insulation around your nerves. Most sources of Vitamin B-12 are animal based, so nutritional yeast is a major player in the nutritional wellbeing of vegans and vegetarians. One tablespoon will provide an adult with a full day’s supply of B-12. It is also high in protein and fibre keeping you fuller for longer.

Ingredients: 
Noodles:
3 small courgettes

Sauce:
1 cup cauliflower
1 tablespoon miso paste
1/4 cup cashews
2 cloves of garlic
1 tablespoon rice syrup
1/4 cup nutritional yeast
Salt, pepper, paprika and coriander, to taste
Water, as needed

Toppings:
Corriander
Violife dairy free cheese (grated)



To make the sauce: blend all the ingredients together until smooth and thick, adjusting according to taste. Mix into your noodles and let them sit for 10 minutes to soak up the sauce. Top off with parma and cilantro and enjoy.
Method: 
To make the noodles: slice the zucchinis on a mandolin or spiral slicer, or even through a cheese grater. Put in a large bowl and set aside.
