Chilli & Coconut Cod with Pesto Lentils (GLUTEN/DAIRY FREE)

If you do not cook with coconut oil then you have got to start. Coconuts are high in medium chain fatty acids which are easily absorbed by the body and become energy and not cholesterol. For some reason people are still scared of the word fat but it is an essential part of our diets. If you do not eat any goods fats like coconut oil you will not burn fat and your hormones will be out of balance- FACT!
Serves: 
1-2
Ingredients: 
2 cod fillets
1 red chilli, finely chopped
1 small onion, finely chopped
2 cloves of garlic, finely chopped
bunch of broccoli, steamed and chopped
1 pack of puy lentils
1 tbsp of dairy free pesto
1 tbsp of coconut oil
1 cm of ginger, grated
1/2 lime, squeezed
Method: 
1. Add the cod, chilli, ginger, garlic, onion, lime and coconut oil to an oven proof dish, cover with tin foil and bake for 20 mins
2. Steam the broccoli for 5-7 mins
3. Add the puy lentils to the broccoli and mix with the dairy free pesto
4. Serve with the cod
5. Enjoy
